Simpler Cuban Sandwiches

I know authentic Cuban sandwiches have sliced pork and would never have mayonnaise on them. But, recipes are just guides and are meant to be adapted to individual tastes, times, and availability of ingredients. I am no where near Cuba or southern Florida, meat costs a fortune, and this sandwich is good. This is what I go with...

Simpler Cuban Sandwiches

Serves 4

  • 1 loaf French bread
  • Mayonnaise
  • Dijon mustard
  • 1/2 pound (226 g) thinly sliced ham
  • 4 slices Swiss cheese
  • Sliced kosher dill pickles
  • Butter

Slice the bread in half lengthwise. Spread one half with mayonnaise, the other with Dijon mustard. Layer the ham and Swiss cheese on one half of the bread. Layer the pickle slices over the cheese. Top with the other half of the bread.

Cut sandwich into quarters. In a large skillet or a flat-bottomed griddle, melt enough butter to coat the cooking surface over medium-high heat. Place the sandwich in the pan and press down with another heavy pan and grill until the cheese is melted.

*I placed mine in the oven and placed the pan with the potatoes we were also having on top of the sandwiches. It worked well.
