Raspberry Limoncello Prosecco

I'm going to TRY to start adding some cocktails to the "beverages" section of the blog. I already do wine, which is mainly so I have a record of which ones I like. But, please be patient. We are not big drinkers, but at certain times of the year or on special occassions, we will make some cocktails. I have a tendency to drink them too fast and forget to take pictures. The next time we have an Aperol Spritz, though, I will be sure to add it!

I found this cocktail recipe on Pinterest and thought it would work perfectly for a Christmas Eve cocktail. It's so festive looking and it did not disappoint! It was also the perfect excuse to pop open the bottle of limoncello we brought back from Italy in October. Use caution though...It is all alcohol and quite strong, but it's also bubbly and refreshing! Cheers :)

Raspberry Limoncello Prosecco

Depends on glass sizes

Ingredients

  • 3 cups (720 mL) prosecco
  • 1 cup (240 mL) limoncello
  • frozen raspberries or strawberries (blackberries might be interesting too!)
  • fresh mint leaves for garnish

Directions

Mix together the prosecco and limoncello. Pour into glasses and top with raspberries and mint leaves, if desired.

*I used wine glasses for this cocktail. The amount listed above made four glasses. The important thing to remember is, no matter what size glass you use, the ratio is 3:1.
