From An Expat Cooks

Slow Cooker Chicken Caesar Sandwiches

Serves 4

  • 4 boneless, skinless chicken breasts
  • 1 cup (240 mL) Caesar dressing
  • 1/2 cup (50 g) Parmesan, shredded
  • 1 Tablespoon dried parsley
  • 2 teaspoons pepper
  • romaine lettuce leaves, rinsed and patted dry
  • Hamburger buns

Place chicken breasts in a single layer on the bottom of the slow cooker. Pour 1/2 cup chicken broth or water over top. Cook on low for 3 to 4 hours.

In a small bowl, combine the Caesar dressing, Parmesan cheese, parsley and pepper, set aside. Remove chicken from the slow cooker and completely drain the liquid. Using two forks, shred the chicken. Return the chicken back to the slow cooker and stir in the dressing mixture until well combined. Continue heating on low for 30 minutes.

Serve the shredded chicken on buns with the lettuce.
